Hello September! I am so excited this time of year is here— it’s my favourite! Don’t get me wrong, I do enjoy the sunshine months, but I am such a fall/winter kind of soul.

I think what I love most about this time of year is that it feels like the kick-off for all the fun festivities ahead with loved ones— like Thanksgiving, Hallowe’en, and Christmas [my ultimate fav]. Our families love getting together, cooking together, celebrating together, and making memories together. I also get so excited for the hearty and comforting recipes, fall fashion, and the leaves changing colour. Fall colours are absolutely beautiful.

Since I am such a coffee lover, and since I love this time of year, I thought I would kick off September by sharing a super simple nutty cashew latte. This easy dairy free latte recipe contains just 4 warming and comforting ingredients— raw unsalted cashews, chai spice, pure [non-alcoholic] vanilla extract, and your favourite coffee or espresso!

All you need to make the Chai Cashew Mylk for this recipe is a high speed blender and a jar that you can seal tightly, then the latte itself is actually quite easy and straight forward. I love using steamed or frothed cashew mylk in my lattes because it adds such a creamy texture that no other nut mylk can deliver, plus cashew mylk does not require any straining, so it’s a quick and easy homemade mylk option that won’t take much of your time or energy. It’s important to soak the cashews ahead of time [for at least 4 hours] just to soften them up, it makes blending them much easier. All you have to do is place the cashews in a bowl with some water and leave them to sit for 4 to 8 hours. Once they are done soaking, rinse and drain them prior to blending them.

Cashews are also a nutritious food source! In general, nuts come packed with a high-energy nutrient-rich profile. Tree nuts in particular [like cashews] have been linked to a number of health benefits— such as reduced risk of cardiovascular disease and decreased risk of metabolic syndrome (source). They are particularly high in healthy fats [monounsaturated + polyunsaturated fatty acids] and contain a variety of vitamins, minerals, fiber, and amino acids.

NUTTY CHAI CASHEW MYLK LATTE

A delicious and nourishing nutty latte with the perfect hints of comfort from chai spice + pure vanilla. Dairy free + vegan.

Chai Cashew Mylk:

Serves: Approximately 4 cups | Time: 5 minutes | Difficulty: Easy

  • 1 cup raw unsalted cashews, soaked ahead of time
  • 2 cups water
  • 1 tsp chai spice
  • 1/2 tsp pure vanilla extract, non alcoholic

Instructions:

  1. Add ingredients into a high-speed blender [I used my Vitamix] and blend until creamy and frothy [takes around 1 to 2 minutes of blending].
  2. Keep stored in an airtight jar up to 4 days. Always give your cashew mylk a good shake before pouring.

Nutty Chai Cashew Mylk Latte:

Serves: 1 | Time: 5 minutes | Difficulty: Easy

  • 1/2 cup of coffee, or 1 to 2 shots of your favourite espresso
  • 1/2 cup Chai Cashew Mylk, steamed or frothed

Instructions:

  1. Brew coffee [or make espresso] as you normally would and pour steamed Chai Cashew Mylk over top.

Note: No steamer or frother? No problem! Heat up Chai Cashew Mylk over the stove and pour into a simple blender with your coffee and blend until frothy!
